Inspired by the rare cocoa growing on Rabot Estate, this exclusive menu uses cocoa sometimes as a light and subtle spice, sometimes as a delicate infusion, but always in a natural, healthy and exciting harmony. After all, cocoa has been used as a savoury ingredient for over 3,000 years and as a sweet ingredient for only 500.

We explore the sweet and savoury nature of cocoa, together with the superb local produce found on Saint Lucia – from the huge array of fresh fish and seafood, to delicate salad leaves, vegetables and plentiful fruit grown on the estate.

Starters include Cacao Gazpacho and Yellow Fin Tuna with Cacao Pesto; mains include Local Dorado with Creamed Leeks and Cacao Nibs and Rib Eye with Dark Chocolate and Port Sauce; irresistible desserts include Saint Lucian Chocolate Tart, Cacao Crème Brûlée and more.

Boucan's breathtaking minimalist design includes a dramatic roof that soars out of the rainforest, inspired by the shape of the cocoa tree. And inside you'll have the best seat in house to admire the iconic Piton Mountain and soak up Boucan's stylish atmosphere, all while watching the busy team of chefs at work in the theatre kitchen.
